Zach Allen at the 2009 StarChefs.com International Chefs Congress
Zach Allen and his team from Molto Vegas traveled to New York for the 2009 StarChefs.com International Chefs Congress. The theme of this year’s congress was “What is American Cuisine?” and featured live demonstrations by some of the country’s most talented chefs.
Zach and his crew gave two hands-on demonstrations highlighting the basics of meat curing and showcasing some more advanced techniques on making different types of specific salumi.
The underlying concept of Zach’s presentations focused on how this traditional Italian technique of preserving meat has become one of the most trendy and popular culinary art forms in modern American cuisine.
The demonstrations would not have been complete without the opportunity for attendees to sample multiple varieties of house-cured meats and sausages all made in Las Vegas by Zach and his team. Of course all of our house-cured meats and sausages are available daily at all three of our Las Vegas restaurants and we would love to have you come down and check them out.
